Make that
squidclient -m HEAD -H 'Cache-Control: only-if-cached\n" http://www.google.com

or if you want it to return "true" on expired objects as well:
squidclient -m HEAD -H 'Cache-Control: only-if-cached,max-stale\n" http://www.google.com
